Diabetes Hits Us Hard.

Unfortunately, it’s been a few months since I posted to this site. My personal life perpetually gets in the way, but I’ve always tried to keep things up to date and talk about food in some way. Because I love food. I adore it. It’s tasty.

Which is where my issues are now starting. Three weeks ago, after a few visits to the doctor, we’ve all discovered that I have type 2 Diabetes. Type 2 Diabetes is a condition where your body either doesn’t produce enough insulin, or the insulin that your body produces is no longer as effective as it’s supposed to be. Insulin is the stuff that lowers your blood glucose level. So, why would this inhibit my ability to still love food? Well, I still do love food, but I have to change the way I eat drastically, and sometimes it’s difficult to talk about food you don’t eat. It’s also why you’ll never read me writing about seafood, but that’s another story…

So yeah, diabetes - how does that affect what I can eat? Diabetics need to minimize their sugar intake in order to manage their blood glucose. Refined sugar wreaks havoc on your blood glucose levels. Sugar is glucose. Higher sugar intake equals higher blood glucose levels - and it happens very quickly, too. But, sugar isn’t the only thing that I need to bee mindful of. Your body does cool stuff with foods - it takes all sorts of stuff and converts it into energy for you to move, breathe, think, blog - whatever. Carbohydrates are another item in food that I have to be mindful of. My nutritionist recommended that I have around 4 carb choices per meal, which is about 60 grams of carbs, but I’ve found that my body won’t let me eat that many. So, for now, I eat about 15-30 grams of carbs for breaktfast, about 30 for lunch, and about 45 for dinner and that helps me keep my blood glucose under control. I also need to be mindful of foods with lactose, which it converted to sugar in your body. Of course, there are caveats to all of these items. I need to eat “good” carbs, and unrefined sugars (if any) - these items are important, but I need to be careful about them.

So, what is good for me to eat? Well, protien is good, except that it’s usually coupled with fats, too. Fats are okay, but I need to be cautious because more “bad” fats will raise my cholesterol, which is never a good thing. So, I need to eat protein in moderation. And “good” fats are good for me, but there are few things high in omega three fats. Almonds, I’ve been told, are a good way to get omega three acids that aren’t fish. Fish are another option, if you’re able to eat them. And with more protein and less carbs, it’s recommended that I eat more fiber, too. Fiber will not only help keep me regular, it also helps buffer the absorbtion of the carbs and sugars that I do eat.

So protein, fats, and fiber are three good things, all in moderation. Carbs, sugars, lactose are three bad things, but are necessary in strict moderation. That’s my diet, in a nutshell.

Yes, this is mostly simplified. I’m not a food scientist or a nutritionist - I’m merely a geek - so, this is not entirely complete, but they’re the rough guidelines I’m working in right now. It has certainly helped lower my blood sugar levels. But, it’s also affected what I can and can’t eat. Most of anything that I’d like to eat, I can’t ;-p

and religiously watch Iron Chef America, Throwdown with Bobby Flay and anything else that’s a good show. We’re still going to blog about that stuff, and you’ll probably see some things about diabetic-friendly recipes. Things are just a little undefined right now, so please bear with us. The Next Iron Chef - Are You Ready For The Finale?

So, this weekend is the finale of Next Iron Chef - a battle between Chef John Besh and Chef Michael Symon!

What’s the secret ingredient?
I actually think I know the answer to this. It’s fish of some sort. There’s a quick shot of it in the preview, but I don’t know what kind of fish it is. It actually looks like a Marlin. I guess we’ll see.

What will we see?
I actually think this will be a good episode - it will be laid out like any normal Iron Chef battle, except that it will be against two competitors. The winner, of course, will be the next Iron Chef. So, does this mean they’re replacing an existing Iron Chef, or just adding another one? If they are getting rid of an Iron Chef, or one of them is retiring, then who is it?

My thought is that one of the other Iron Chef’s is leaving. I think it’s Morimoto. He hasn’t been in many recent episodes, and he’s definitely the longest running Iron Chef - he’s been an Iron Chef for at least 8 years. If it’s not Morimoto, then I don’t know who it is. Bobby Flay does so much stuff - he’s in everything and has fifteen TV shows (okay, I’m exagerrating) so I can see him dropping one of them to focus on other things. If it’s not Flay, then I think it’s Cora. I see Batali being an Iron Chef… forever ;-) That’s a good thing - I enjoy watching him, even though I don’t appreciate his Clogs quite the way I think other people do.

I’m choose Besh for the win. Historically, I’m probably dooming him to failure by saying that, but he has more - Iron Chef like qualities than Michael Symon does.



The Next Iron Chef - Premier!

Okay, so I’m blogging about The Next Iron Chef, and I’m also sitting here in the middle of the episode. I needed a break from programming for a bit. I missed the first couple minutes of the show, so I didn’t see the setup, but they just finished showing off the knife skills of the chefs.

One thing I find interesting so far is the immense amount of chefs on the show that’ve already battled in kitchen stadium. Here are the chefs:

John Besh - I think he battled Mario Batali - A-ha! I’m right. He actually won again Batalie in Battle Andouille.

Chris Consentino - looks unfamiliar

Jill Davie - also looks familiar, but I can’t find a reference of her being on ICA.

Traci Des Jardins - I *know* she battled Batalie. The name sounds familiar. Sure enough, she too battled Batali. And She beat him with shrimp!

Gavin Kaysen - I don’t recognize him.

Morou Ouattara - I’ve seen him on ICA before. He battled Bobby Flay in Battle Pea, but he lost ;-)

Aaron Sanchez - looks new. Oh, crap, he battled Morimoto in battle Black Bass, which I’ve seen at least three times in the past week. How did I miss that?! :-o

Michael Simon - The name sounds familiar - I think he’s in something else. I think I got this one wrong, too. Boo.

Anyway, they’re working on desserts right now. We’ll see how this show works. It’s actually a little different format than I thought it was going to be, but it’s in a good way.



Top Chef Finale - Are You Ready?

So, I’m sitting here taking a break from other things, and Iron Chef America Battle Shrimp is on right now. It’s an older episode, but it’s looking amusing. Batali versus Des Jardins - and it’s just starting. Oh, but wait, this isn’t about Iron Chef - it’s about Top Chef :-)

So I’m excited about Top Chef tonight. It’s the last episode - they’re eliminating two people, leaving one winner. It starts at 10pm. I probably should have blogged about it before. The final three people on the show are Dale, Hung, and uh… what’s her name? Casey? I think that’s it. Anyway, here are my thoughts:

  • I Hope Hung doesn’t win. In Finale, part 1, he *lied* through his teeth - multiple times. He also has a really crappy atitude toward helping the other chefs - his teamwork is non-existant. I know, it’s a competition, but when others are willing and able to help each other out, and you’re the only guy who’s not willing to help out other people, it shows your character. Apparently you’re not better in a way that you feel comfortable *helping* your competitors.
  • I’m not sure if I want Dale or Casey to win. I was really surprised to see Brian leave though. I didn’t think he would. But, I think Casey is in a better position to win. She’s really started to shine. Of course, now that I’ve mentioned this, it means Hung will take the prize. That’s always the way it works for me ;-)
  • To Bravo: Your Video Blogs Suck. I have a ricidulously fast cable modem. I should have no problem accessing your website. The hype hasn’t even started yet, and I’m having a tough time even getting a response from your web server. Puh-lease, fix it!
  • They just had a Top Chef commercial saying that they’re announcing the winner *live*. This is very cool. But, it’s the first time I’ve heard of that. Advertise it earlier!

Anyway, I’m happy about tonight. This is the first season of Top Chef that I’ve watched. If Hung wins, I’m not watchiing again ;-) If he doesn’t, then I will blog more about it tomorrow.



Iron Chef America - Battle Apple?

Iron Chef America Battle Apple. I would say something about the content of the show, but I’m still - uhh - not quite sure what to write about this battle.

Chef Mark Tarbell hails from Arizona, and entered kitchen stadium, choosing to battle Iron Chef Cat Cora. The chairman chose Apples as the secret ingredient. I think Alton Brown mentioned that there were at least four different varieties of apple available. The Judges? The regulars Jeffrey Steingarten and Karine Bakhoum, along with a judge I’ve never seen, Bone Crusher. Seriously, The guy’s name is actually Bone Crusher - how could he be an Iron Chef America judge? I want to be an Iron Chef America judge! I’m sure I’d be able to give a more eloquent and communicative impression of the food I would be served on the show.

The battle was a very poor battle to try to follow last week’s Battle Parmigiano Reggiano - it wasn’t nearly as good - lacked excitement, wasn’t as entertaining and the ingredient was very common, yet viewers had to think about what you would even be able to make with apples - aside from pie. Even with the challenge, I thought the chefs did pull off some creative dishes. I liked Tarbell’s Dessert, a trio of small apple orbs - one coated in caramel/toffee, one coated in chocolate, and one coated in the classic red candy that’s at the hard crack stage. Cora also presented a caramel apple, but used very small apples, which I’m sure were much harder to eat. the judges didn’t seem to like it, either! :o I called a pork and apple dish at the beginning of the battle, and sure enough, Tarbell presented it to the judges. It was the only dish of the challenger’s that the judges didn’t like.

The judging panel was odd. Steingarten commonly comes off as being a bit moody when the other judges don’t agree with his pallet, or when he doesn’t like the food. This isn’t necessarily always bad, but it reminds me of a grumpy old man who has no regard for other people, which can justly be viewed as a judge, but doesn’t really help the viewer of the show. When someone else says “I don’t taste the apple in this dish”, and his only rebuttal is “I disagree - I DO taste the apple” it just doesn’t work for people who aren’t there, smelling and tasting the dish. Bone Crusher actually played a very nice contrast to Steingarten, even nudging him and tell him to cool it down (which everyone on the panel laughed about,) but the end result leaves us feeling as if we’re viewing a cackle of geese on screen fighting. This has happened many times in Iron Chef America, and it’s the only thing I don’t like about it. There’s obvious tension on the panel, but it’s not always justified.

Anyway, to critique the judging and not mention that the judges are supposed to convey to the audience exactly what the dishes are like wouldn’t provide positive criticism to them. To Bone Crusher: We obviously expect the dished on Iron Chef America to be excellent - we expect them to be good, but you didn’t tell us what was good about them. You either liked it, really liked it, or didn’t like it - but we didn’t know what you did or didn’t like about it. Steingarten mentioned that one of Tarbell’s dishes (the one with the scallop) was overcooked and the scallop was rubbery - you disagreed, but just said “I think it’s good.” -that may be the truth, but if you disagreed, which part did you disagree about? Was your scallop overcooked? Anyway, food for thought to help the viewers the next time you judge Iron Chef America :-)
