		<description>I thought the show I saw last night was the WORST Iron Chef America episode I have ever seen.  Other than Jeffrey, the other two judges were rude, ill mannered and generally ignorant about their place on the show.  Their comments were tacky and showed they really had no idea what they were talking about.  If they keep getting &quot;judges&quot; (and I use that term liberally), the show will lose any integrity it has.  Appauling.  If I were Jeffrey I&#039;d have had a hard time not walking off the show.</description>

Keep going and please consider the Detroit metro area for a second restaurant!!</description>

I&#039;m a geek in a way that if I wanted spinach macaroni and cheese, I would probably just come up with my own recipe - I know Bobby used four or five different cheeses, and I know he finely chopped spinach and added it to the recipe, probably after blanching it. I also know that he started with a lot of butter and flour, creating a roux - which is typical for making a standard macaroni and cheese dish. I know - this is all way more complicated than you were probably looking for, but it&#039;s all the stuff that goes into the dish.

So, create a roux, add your cheese to the roux to make your cheese sauce, add spices (salt, pepper would be a good place to start) and then add blanched and finely diced spinach. Try it and see if it works. I will look back at the episode - I know they mention the cheeses Bobby uses, but I don&#039;t know what they were off the top of my head.</description>
