I’m a geek in a way that if I wanted spinach macaroni and cheese, I would probably just come up with my own recipe – I know Bobby used four or five different cheeses, and I know he finely chopped spinach and added it to the recipe, probably after blanching it. I also know that he started with a lot of butter and flour, creating a roux – which is typical for making a standard macaroni and cheese dish. I know – this is all way more complicated than you were probably looking for, but it’s all the stuff that goes into the dish.

So, create a roux, add your cheese to the roux to make your cheese sauce, add spices (salt, pepper would be a good place to start) and then add blanched and finely diced spinach. Try it and see if it works. I will look back at the episode – I know they mention the cheeses Bobby uses, but I don’t know what they were off the top of my head.
