Iron Chef America – Battle Spinach (Flay V. Back) Overview
05 10 2009So, Food Network is all about showing ICA Battle Spinach. Interestingly enough, I’m looking through my video archive, and I have a version of the show from back in summer of 2008 – The original air date seems to be 03/16/2008.
Chef Akira Back interestingly choose to challenge Bobby Flay instead of his former master Morimoto. Here we go with a rundown of the dishes:
Akira Beck’s dishes:
- Tomato and Spinach Gelee
- Chawan Mushi
- Chicken and Spinach Shabu-Shabu
- New Age Nabi
- Spinach Yuzu Sake

Bobby Flay’s dishes:
- Spinach and Oyster Bisque
- Spinach and Feta Souffle
- Spinach Tamale
- Spinach Macaroni and Cheese
- “Homage to The Steak House” – Creamed Spinach, Spinach Hash Browns and Porterhouse with Spinach Butter
So yeah, both competitors came up with some interesting dishes, even though they have vastly differing styles – Southwest versus Japanese.

so how in the world can we get the recipe for the spinach macaron and cheese from he iron chef show??
Katy – that’s an interesting question. I can look through the video I have of the battle and give you a small list of ingredients.
I’m a geek in a way that if I wanted spinach macaroni and cheese, I would probably just come up with my own recipe – I know Bobby used four or five different cheeses, and I know he finely chopped spinach and added it to the recipe, probably after blanching it. I also know that he started with a lot of butter and flour, creating a roux – which is typical for making a standard macaroni and cheese dish. I know – this is all way more complicated than you were probably looking for, but it’s all the stuff that goes into the dish.
So, create a roux, add your cheese to the roux to make your cheese sauce, add spices (salt, pepper would be a good place to start) and then add blanched and finely diced spinach. Try it and see if it works. I will look back at the episode – I know they mention the cheeses Bobby uses, but I don’t know what they were off the top of my head.
